国の文化財に登録された六つの蔵の内、五号蔵と呼ばれる土蔵の木桶で熟成させました。
大豆・米とも地元産、塩は沖縄の塩シママースを使用。材料にもこだわった逸品です。県産あきたこまちを大豆の二倍使った甘口の田舎味噌です。

Out of the six Kura warehouses that are registered as a national cultural property, this product is fermented in the large wooden barrel in Kura number five, hence the inclusion of go in the name, which means five in Japanese. Both soybeans and rice are locally grown, and the salt used is Okinawan shimamasu. A sweet country miso that uses Akita Komachi rice to the ratio of two times as much as soybeans.

石孫の手前味噌

自慢話の枕詞として使われる「手前味噌」とは、春になると各家々で造る自家用味噌が語源になっているとか。その家でなければ出せない味を自慢することから[手前味噌]という言葉が生まれたと言われています。懐かしい田舎の味噌を再現しようと生まれた五号蔵。米処秋田で育った米で造った杜氏自慢の米麹をたっぷりと贅沢に使った「石孫の手前味噌」をぜひご賞味下さい。

People are proud to use the phrase temae, in Japanese, because it means we are not ashamed to sing the praises of the product we have produced. Temae miso, represents the best of our hard work and care. It is said that the expression was born to boast of the exquisite taste that can only be served at that individual house. The fifth Kura warehouse was re-opened to reproduce the nostalgic countryside miso of long times past, reminiscent of the Temae miso that you may have experienced from times past. Please enjoy Ishimago’s handcrafted temae miso, which uses plenty of rice koji and is made with rice grown in Akita.

保存方法:直射日光及び高温多湿を避け、冷暗所で保存。
ご注意:
保存料不使用のため、ごく稀に産膜酵母(麹カビと呼ばれる白いカビ状のもの)が発生することがございます。産膜酵母は、人体には無害ですが風味が落ちますので、開栓後は冷蔵庫での保存をお勧めします。

Notes:
This product is preservative-free. For best quality, keep refrigerated. When kept in warm condition, you may find the membrane yeast (white fungi originate to Koji) on miso’s surface. They are harmless but the taste may be spoiled.
